Roasted Pumpkin Seeds

I’ve wanted to make roasted pumpkin seeds the past couple of years, but my husband is not a fan of carving pumpkins.  I know I bought one last year, but we never did anything with it.  It just sat out in the snow and froze until we threw it away.

This year I was determined we had to carve pumpkins for my daughter.  She’s old enough to understand and she had quite the fascination with pumpkins this year.  I pulled my husband into it, and let him pick a design, to help get him excited.  pumpkinseeds

Well, because we finally carved pumpkins, we finally had seeds to roast this year.  My husband was kind enough to go through and separate them from the pumpkin guts while I finished carving his Batman pumpkin for him.  He had never had roasted seeds, but he knew I was excited.  I don’t really recall eating them growing up.  I think we made them once.  I do remember that they were good though.

Since I had never made them before I had to look online to figure out how to do it.  Basically I just soaked the seeds in salt water for several hours, then laid them out to dry.  The next day I sprayed them with a butter flavored cooking spray and sprinkled some Parmesean Garlic Seasoning from Kernal Seasons and some Krazy Jane’s Mixed up Salt.  Then I stuck them in the oven at 300 degrees for about 30 minutes, mixing them up every 10 minutes or so.

They turned out sooooo good.  I haven’t stopped snacking on them all day.  My daughter seems to like them as well.

I think this is one tradition we will continue.
